1 lb ground turkey
2 tsp ground sage
1 tsp thyme
1 tsp fennel seeds
1 tsp paprika
1 tsp oregano
½ tsp salt
1 tsp black pepper
⅛ tsp nutmeg
⅛ tsp crushed red pepper flakes

Add all the spices to a mortar and grind all of these together.
Add the spice mix to the ground turkey and mix well.
Form patties or links if desired, or can just brown if making it as ground sausage as you would need for the sausage gravy.
If using immediately: Heat 1 tbsp neutral oil over medium heat in a skillet.
Cook until golden brown, usually 2-3 minutes per side, if making patties.
Serve immediately.
