4 fresh cod filets and 12 jumbo shrimp seasoned with salt and fresh ground black pepper
2tbsp butter
juice ½ lemon
PINAPPLE SALSA
1 cup diced fresh pineapple
¼ cup diced red onion
1 jalapeño seeded and diced
½ cup diced fresh roma tomatoes
¼ cup chopped fresh cilantro
juice of 1 lime
¼ tsp salt
¼ tsp pepper
⅛ tsp cumin

In a medium mixing bowl, mix all the ingredients for the pineapple salsa and let sit for at least 10-15 minutes for the flavors to marry.
In a large pan, melt 1 tbsp of the butter over medium-high heat, and sear the cod on both sides until golden brown. Usually 3 minutes per side.
Remove and set aside. In the same pan, melt the other tbsp of butter and cook the shrimp until opaque and golden brown.
Serve the cod over sautéed broccolini, layer 3 shrimp over it, squeeze some of the lemon and then place a couple spoonfuls of the pineapple salsa over it.
