Pecan Chicken Salad

What a better lunch option than a refreshing and healthy Chicken Salad. But this recipe will offer you even more for your money! You will have the crunch of the pecans and the perfect balanced flavor of the chicken and spices in it.

I like to make a good bowl of this recipe and keep it in the refrigeration for up to 5 days, if it lasts that long! My favorite way to make eat it is as a sandwich with toasted croissant bread. But I also like to bring it to lunch and eat it as a dip with pretzel chips and fruits.

  • 2 ½ cups cooked chicken*

    ½ cup diced sweet or red onions

    ½ cup diced celery

    ¼ cup chopped pecans

    ½ cup mayonnaise

    2 tbsp dijon mustard

    1 tbsp honey

    ¼ tsp salt

    ¼ tsp pepper

    Toasted croissant bread for serving

    1. In a large bowl, add all the ingredients. Mixed until very well combined.

    2. Cover and let it sit for at least 10 minutes for the flavors to marry.

    3. Serve over a toasted croissant bread.
