Chicken Parmigiana

Time: 40 minutes

  • 4 boneless chicken breasts, lightly pounded to ½” thickness

    ¾ cup fresh marinara sauce

    ½ shredded mozzarella cheese

    BREADING STATION

    1 cup all purpose flour seasoned with 1 tsp salt and 1 tsp pepper

    1 egg + ¼ cup buttermilk

    1 cup breadcrumbs seasoned with 2 tsp italian seasoning, 1 tsp oregano, 1 tbsp grated parmesan cheese, 1 tsp salt, 1 tsp freshly ground black pepper

    1. Preheat the oven to 375°F and Heat a large pan with vegetable oil for frying ( about 1" deep) over medium heat.

    2. Trim and cut the chicken breast and pound them to ½” thickness. Season them with salt and pepper.

    3. Make a breading station with 3 trays:

      • all purpose flour, salt and pepper

      • egg and buttermilk

      • breadcrumbs, italian seasoning, oregano, parmesan cheese, slat and pepper.

    4. Bread each chicken breast starting with the flour, then the egg, finishing with the seasoned breadcrumbs. Set them aside on a rack, until ready to fry.

    5. Fry them for about 3-4 minutes per side, until golden brown. Let them drain over the cooling rack.

    6. Top with marinara sauce and mozzarella cheese.

    7. Bake them for 10 minutes or until the cheese has melted.

    8. Serve over spaghetti and garnish with fresh basil.
